Easy plant-based Cinnamon rolls

Winter is coming and we know it. Days are getting shorter and the weather is more grey and dark. Who takes a car, needs to win the fight with ice on the windows and has to be extra careful on the road. But, happily, December is also the month of the cozy holidays that gives color to streets and houses during this time of the year.

With an amazing ‘Kaneelboller’ it gets even better. Maybe you are wondering what I’m talking about? Well, I mean the amazing and famous Cinnamon rolls that you can find in almost every Scandinavian café. They represent the holidays at the end of the year. Who doesn’t want to warm up with the great taste of sugar en cinnamon while being cozy under a blanket. 

As you may know, I try to minimize the amount of fat and sugar in my recipes. And in my version of this pastry, I also tried to do so. So they will not be exactly the same as the ones you might have tasted in Norway, Finland or Denmark. They should be lighter, what makes it easier to eat (even) more of them.

But, enough talking. Back to the kitchen to try this recipe. As I am considering of making a ‘how to’ video for this recipe, I wonder if it would be something you would use? Let me know in the comment section or by e-mail (or social media)!

Easy Plant-Based Cinnamon Rolls

Ingredients
  

For the dough:

  • 1 cup plant based milk
  • 1/3 cup plant based alternative for butter
  • 3 2/3 cup flour for baking
  • 2 1/2 tsp instant yeast
  • 1/4 cup coconut sugar

For the filling:

  • 4 tbsp coconut sugar
  • 2 tsp cinnamon or more if you like
  • 3 tbsp plant based alternative for butter

Instructions
 

Make the dough

  • Melt the butter and mix it with the vegetable drink. Put aside.
  • Add all dry ingredients in the bowl of a food processor.
  • Put the bowl on the food processor. Use the dough hook and let it turn at low speed.
  • Incorporate the vegetable drink and butter into the dry mixture.
  • Mix until it becomes a ball of dough (like pizza dough).
  • If the mixture is too dry, add a little vegetable drink and if the mixture is too liquid, add a little flour (add flour/milk a spoon at a time).
  • Cover with a clean cloth and let rise for an hour. The dough must double in volume.

Roll it baby

  • Provide a surface that is lightly covered in flour. When the dough is risen, you roll out the dough into a square.
  • Melt the butter and spread it evenly over the square of dough with a brush.
  • Mix the sugar and the cinnamon in a separate cup. When well mixed, cover the entire dough in a nice layer.
  • Roll the dough (like a sleeping bag) and cut into pieces (about 2 cm wide).
  • Grease an oven dish with the plant based alternative for butter and put the rolls in the dish
  • While you let the oven preheat to 180 °C (350°F), let the rolls rest for about twenty minutes.
  • Sweep the rolls with the remaining ‘butter’ before putting everything in the oven.
  • Let them bake for 20 to 30 minutes until they are nicely golden.
